Trends in production
Freshwater production had stabilised around 100 000 tonnes until China became involved in this area of the industry. As in other areas of aquaculture, the opportunities available in China led to a rapid acceleration in crustacean production.
Crayfish production has mainly been done in the USA, based on red marsh crayfish. Since 2003 China has also produced this species, leading rapidly to a tripling of production totals. In 2005, world production reached 104 000 tonnes of which 84% was grown in China.
Freshwater tropical shrimp
The rearing of the freshwater tropical shrimps (Macrobrachium rosenbergii and Macrobrachium nipponense) is a form of subsistence aquaculture. China accounts for 5/6 of global production. This activity has also developed in South America.
